The preparation is super easy and only takes a few minutes. You’ll be surprised at just how quickly you’ll be chowing down!

Our Grilled Zucchini with Feta: A Veggie Delight

In my family, side dishes are always part of grilling. And this is usually a place for veggies to shine, not just as a crunchy salad, but also marinated from the grill. Especially marinated, it is so easy to enjoy the best of summer produce like this.

When I was visiting my parents a few weeks ago, the weather was already spring-like and warm. So naturally, my father fired up the grill. While he took care of the meat, I was responsible for the vegetable side dishes. One of them was grilled zucchini. The great thing about it: You can adapt the recipe as you like and basically use almost all of the spices and herbs you have on hand.

Simple and easy is the magic formula here: Grilled zucchini doesn’t need much. Cut it into thin slices or strips and marinate it with some olive oil, herbs, and spices. Last time I opted for an Italian herb mixture, salt, and pepper. For more freshness, I also used a few splashes of lime juice. Whether going for dried or fresh herbs, we promise that you’ll be thrilled with the results. Finally, chili flakes will bring some more heat. And you can even swap the grilled zucchini for other vegetables if you like. The possibilities are really endless!

Grilled Zucchini with Feta

Ingredients
  

  • 1 zucchini
  • 2 tbsp olive oil
  • 1 splash lime juice
  • 1-2 tbsp Italian herbs
  • salt & pepper
  • ½ block feta
  • 2 tbsp pine nuts optional

Instructions
 

  • Wash the zucchini, trim the ends, and cut the rest into thin slices or strips.
  • Place the zucchini in a large, sealable plastic container. Drizzle with olive oil and lime juice, and sprinkle with the herbs, salt, and pepper.
  • Close the container and shake vigorously so that all zucchini pieces are coated with oil and seasonings.
  • Grill the zucchini in a grill pan until lightly browned on both sides. Sprinkle with crumbled feta and pine nuts before serving, if you so desire.

Notes

You can also use other seasonings for the zucchini, like chili flakes or fresh/dried herbs.
