Grilled Zucchini with Feta

zucchini

tbsp
olive oil

splash
lime juice
1-2
tbsp
Italian herbs
salt & pepper
½
block
feta

tbsp
pine nuts

Instructions
Wash the zucchini, trim the ends, and cut the rest into thin slices or strips.
Place the zucchini in a large, sealable plastic container. Drizzle with olive oil and lime juice, and sprinkle with the herbs, salt, and pepper.
Close the container and shake vigorously so that all zucchini pieces are coated with oil and seasonings.
Grill the zucchini in a grill pan until lightly browned on both sides. Sprinkle with crumbled feta and pine nuts before serving, if you so desire.
Notes
You can also use other seasonings for the zucchini, like chili flakes or fresh/dried herbs.
