You know it’s fall when cranberries start popping up in your local grocery store.
Sure, you might usually spot them beside the Thanksgiving turkey, but we’re here to make the case that these tart little gems deserve a place on your table all year long. No matter the season, our cranberry-oat-muffins always hit the spot!
These muffins are a great way to use up fresh cranberries or even indulge in that bag of dried cranberries that’s been collecting dust in the pantry. No matter which way you stir it, these muffins are easy to make and even easier to love. Besides the berries, you’ll need to make sure your kitchen is stocked with: flour, sugar, rolled oats, oil, baking powder, chopped almonds, milk, eggs, salt, and cinnamon. Let’s get the oven pre-heated and start baking!
First, prepare a muffin tin by lining it with paper liners. In a bowl, mix the dry ingredients well. In a separate smaller bowl, whisk the eggs and then add the oil and milk. Combine the wet ingredients with the dry ingredients and mix until a smooth batter forms. Fold in the dried or fresh cranberries and the chopped almonds. And just like that, your batter is ready! Pour the batter evenly into your muffin tin. Finally, sprinkle a few rolled oats on top.
Now the muffins just need to bake until golden brown. Once ready, do make sure to let them cool before serving!
For a little extra zhuzh: Mix some chocolate chips into the batter. This will give the muffins a rich sweetness and create a mouthwatering contrast to the tart cranberries.

Cranberry Oat Muffins
Ingredients
- 1½ cups rolled oats
- 1½ cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- A pinch of salt
- 2 eggs
- ½ cup vegetable oil
- ¾ cup milk
- 1½ cups cranberries fresh or dried
- ¼ cup chopped almonds
Instructions
- Preheat oven to 350°F. Line a muffin tin with paper liners.
- In a large bowl, mix oats, flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk eggs. Mix in oil and milk. Combine the wet ingredients with the dry ingredients and mix until smooth.
- Fold in the cranberries and chopped almonds. Make sure not to overmix!
- Divide the batter among the muffin liners and sprinkle a few oats on top. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool completely before serving.
