INGREDIENTS
- 2 heaping tbsp yogurt
- ½ tsp baking powder
- 2 eggs
- 2 tbsp melted butter
- 2 ½ tbsp brown sugar
- ½ tsp cinnamon
- ¾ cup ground oatmeal
- ½ cup almonds, slivered
- 1-2 tbsp dark chocolate or chocolate chips
INSTRUCTIONS
- Preheat oven to 350°F.
- Mix the yogurt with the baking powder until it begins to (slightly) bubble and expand.
- Add the eggs and melted butter.
- Stir in the sugar and cinnamon.
- Next, add the oatmeal. Let the batter rest and thicken for five minutes.
- Finally, fold in the slivered almond and chocolate pieces.
- Line the cake pan with parchment paper, then pour in the batter.
- Bake for 25 minutes, until golden brown and firm on top.
