Oat bars are actually a classic of British cuisine, where they’re known as ‘flapjacks.’ Although the meaning of the name has changed over the years, Shakespeare already mentioned them in the 16th century in his play “Pericles, Prince of Tyre.” At that time, however, flapjacks were equated moreso with puddings and seemed to be more tart-leaning.
It wasn’t until 1935 that flapjacks, or oat bars, came to describe a kind of cross between cake and granola bar. Since then, however, they have earned a firm place in the hearts of many a sweet tooth. We are big fans of energizing and chewy oat bars and are always ready to experiment with different ingredients. Our latest obsession? Cherry oat bars. These cleverly combine the summery taste of the cherries with nutty rolled oats, making them truly delightful.
The preparation is also a real piece of cake, pun intended. First, you need cherries and sugar. Pit the fruit and cook them with a little sugar until some of the liquid has evaporated. Then thicken the compote with cornstarch.
Make sure, of course, to have rolled oats on hand. After melting honey and butter together, mix the oats in to create a mouthwatering mixture. Next, spread some of the honey-butter-oat mixture onto your baking sheet and set the rest aside briefly. You’ll want to now spread the cherry compote over the oats and then the remaining oat mixture on top. Press everything everything down firmly, making sure there are no large gaps between the flakes. Then you’ll pop the sheet into the oven and bake until the top is golden brown and smells roasted. We promise you, your kitchen will smell amazing!

Cherry Oat Bars
Equipment
- 1 Square baking pan
Ingredients
- 2 cups cherries pitted
- 1 tsp vanilla extract
- 1 tsp cornstarch
- 2 cups rolled oats
- ½ cup butter
- ⅓ cup honey
- 1 pinch salt
Instructions
- Preheat the oven to 350°F.
- In a small saucepan, cook the cherries with the sugar until they release their juices. Mix the cornstarch with a little cold water until smooth, add it to the cherries, and simmer briefly until thickened. Let the cherry compote cool slightly.
- Add half of the oat mixture to the pan and firmly press it down. Spread the cherry compote over it. Cover with the remaining oat mixture and press this layer down firmly as well..
- Melt butter with honey in a saucepan until combined. Place the oats and salt in a bowl, and then pour the warm honey butter over them. Stir the mix thoroughly.
- Line a small baking pan with parchment paper.
- Add half of the oat mixture to the pan and press it down firmly. Spread the cherry compote evenly over the oats. Then cover with the remaining oat mixture and press this layer down firmly as well.
- Bake for about 25 minutes, or until golden brown. Let them cool completely before cutting into bars or pieces.
