Date-Oatmeal Cookies: A New Way to Snack

Candies are usually brimming with sugar, meaning one thing: That dreaded sugar crash. Still, who are we to deny the finer things in life? We here at Scrumdiddlyumptious advocate for approaching delicousness from all different angles. Luckily, there are more sustainable alternatives, like our quick date-oatmeal cookies. They’re sweetened solely from dates and a little cinnamon, and the recipe’s oatmeal makes them really nice and chewy. They’re subtly sweet and incredibly filling. Don’t blame us when you find you can’t stop making them!

The ingredient list for our date-oatmeal cookies is manageable. Besides oatmeal and dates, you’ll also need room-temperature coconut oil, some cinnamon, vanilla extract, baking powder, a little salt, ground almonds, and two eggs.

Tip: Before you start, soak the dates in warm water for ten minutes. This will soften them and make them easier to process. Be sure to buy pitted dates, this will save you a step. Drain the water after soaking and then puree the dates. Alternatively, you can also opt to finely chop the dates.

Mix all ingredients together to form a smooth dough. You will then want to use the dough to form small balls. Line them up nicely on a baking sheet, leaving some space between them, flatten slightly and bake for 15 minutes.

If you’re looking for something to snack on with your afternoon cup of coffee, for in between meals, or to take with you on the go, these oatmeal cookies are ideal. And best of all: They’re quick to make and bake.

Date-Oatmeal Cookies

Ingredients
  

  • ¾ cup pitted dates
  • ¾ cup rolled oats
  • ½ cup ground almonds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch of salt
  • 2 eggs
  • cup coconut oil melted

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Soak the dates in warm water for about 10 minutes. Drain the water and puree the dates or chop them into very fine pieces.
  • In a bowl, mix the oats, ground almonds, cinnamon, vanilla extract, baking powder, and salt together.
  • Add the eggs, melted coconut oil, and chopped or pureed dates. Mix until a smooth dough forms.
  • Form small balls from the dough. Line them up on the baking sheet, leaving some space between each ball. Flatten them slightly.
  • Bake the date-oatmeal cookies for about 12-15 minutes, until golden brown. Once golden, remove from the oven. Let them cool completely on a wire rack.
