Cherry Oat Bars

  • 1 Square baking pan

Ingredients
  

  • 2 cups cherries pitted
  • 1 tsp vanilla extract
  • 1 tsp cornstarch
  • 2 cups rolled oats
  • ½ cup butter
  • cup honey
  • 1 pinch salt

Instructions
 

  • Preheat the oven to 350°F.
  • In a small saucepan, cook the cherries with the sugar until they release their juices. Mix the cornstarch with a little cold water until smooth, add it to the cherries, and simmer briefly until thickened. Let the cherry compote cool slightly.
  • Add half of the oat mixture to the pan and firmly press it down. Spread the cherry compote over it. Cover with the remaining oat mixture and press this layer down firmly as well..
  • Melt butter with honey in a saucepan until combined. Place the oats and salt in a bowl, and then pour the warm honey butter over them. Stir the mix thoroughly.
  • Line a small baking pan with parchment paper.
  • Add half of the oat mixture to the pan and press it down firmly. Spread the cherry compote evenly over the oats. Then cover with the remaining oat mixture and press this layer down firmly as well.
  • Bake for about 25 minutes, or until golden brown. Let them cool completely before cutting into bars or pieces.
