Oatmeal Honey Muffins: How to Make Them Quick & Right

Muffins can be a great alternative to other breakfast heavy-hitters like toast and scrambled eggs. Well, at least, if you bake them with healthy ingredients. Thankfully, our oatmeal honey muffins do that just that. Their recipe calls for, among other things, oatmeal and plain yogurt. Both ingredients provide you with protein and ensure that your breakfast keeps you full for a long time. To keep the good health rolling, we opt to use honey in lieu of sugar to sweeten the pot.

The good thing is: The muffins can easily be baked in the evening and left to cool overnight. The next morning, all you need to do is brew your coffee and you’ve got your breakfast ready to go. It doesn’t matter if you’re sitting at the breakfast table or getting ready to go, these muffins can stay put or come with you!

So, what are we waiting for? Let’s get baking! Start by mixing the flour, oatmeal, baking powder, baking soda, cinnamon, and salt together. In a second bowl, mix the eggs, honey, yogurt, milk, and canola oil together. Once well mixed, pour the liquid ingredients into the dry ingredients. Mix until a smooth dough forms. Then, pour it into paper muffin liners, and sprinkle a few oats on top. Finally, bake the muffins for 20 to 25 minutes until they have a golden brown color. You can check if they are done by inserting a toothpick into the center of the muffins. Once it comes out clean, your muffins are ready to cool!

Equipment

  • 12 Paper muffin liners
  • 1 12-cup muffin tin

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 cup rolled oats
  • 1 packet baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • 1 pinch of salt
  • 2 large eggs
  • cup honey
  • cup plain yogurt
  • ½ cup milk
  • cup canola oil

Instructions
 

  • Preheat oven to 350°F. Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk together the eggs, honey, yogurt, milk, and oil until well combined.
  • Add the wet ingredients to the dry ingredients. Stir gently until just combined.
  • Divide the batter evenly among the prepared muffin liners. Sprinkle with a few extra oats.
  • Bake for 25-30 minutes, or until golden brown. Your muffins are ready once a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before moving them to a wire rack to cool completely.
