Ingredients
- 1 mango
- 1 tbsp fresh parsley chopped
- 1.3 lb turkey cutlets
- 4 sliced ham slices
- 2 tbsp oil
- salt & pepper
Instructions
- Peel the mango and cut the flesh from the pit. Slice about half into thin slices.
- Soak the skewers in water.
- Wash the parsley, pluck the leaves from the stems, and chop roughly.
- Place the turkey cutlets between sheets of plastic wrap and pound them flat.
- Top each turkey cutlet with 1 slice of cooked ham, a few mango slices, and some parsley.
- Roll them up and cut them into 3-4 small rolls.
- Drain the skewers and thread the turkey rolls onto them.
- Drizzle with oil, salt, and pepper.
- Grill the turkey-mango skewers for 10-12 minutes over high heat.
