In the summer, no one wants to spend time in a hot kitchen. It’s much nicer to be outside, enjoying the backyard or patio with some grilled goodies. Today, instead of hearty steaks and rustic sausages, we’re going veg with our feta and zucchini pockets. Wonderfully summery and easy to prepare, this is a recipe that won’t dissapoint.

Easy Grilled Feta and Zucchini Pockets Recipe

This is a recipe that turns on simplicity. You only need six ingredients for these feta and zucchini pockets. First, have a zucchini on hand, whether from the grocery, produce stand, or maybe your own garden. You’ll also need feta cheese, dried thyme, liquid honey, and a red onion.

First wash the zucchini, cut off the ends, and cut the vegetable into thin strips. This is best done with a vegetable peeler. Cut the onion into rings and the feta into roughly 2×2 inch cubes.

Now comes making the actual pocket. Place two zucchini strips next to each other so that they overlap slightly, and then two more strips crosswise on top. Next, simply place a feta cube in the middle. Sprinkle some dried thyme over top and top with a few onion rings as well. Now wrap the zucchini completely around the cheese and secure with a toothpick to prevent the pocket from opening.

Grill the feta and zucchini pockets and cook for four to five minutes per side. Season with salt and pepper and drizzle with honey before serving. Our tip? Hot honey or other infused honeys could also add an rich twist to the dish as well.

Ingredients
  

  • 1 zucchini
  • 14 oz feta cheese
  • 1 red onion
  • 1 tsp dried thyme
  • salt & pepper
  • 1 tsp honey

Instructions
 

  • Wash the zucchini and remove the ends. Then, using a vegetable peeler, cut it lengthwise into strips. Once done, lightly salt the zucchini strips.
  • Cut the feta into roughly 2×2 inch cubes and the onion into rings.
  • Now place two zucchini strips next to each other and then two more strips crosswise on top. Place a feta cube in the middle, sprinkle with some dried thyme, and top with a few onion rings. Then fold the zucchini over the feta so that it wraps it. Finally, secure with a toothpick to prevent the pockets from opening.
  • Grill the zucchini packets for about 4 to 5 minutes per side, season with salt and pepper, and drizzle with honey before serving.
