I love to barbecue. As soon as the temperatures rise, I’m looking for any excuse to get to grilling! And a big part of cookout season? Personally, for me, it’s all the meats! As the years have gone on, I have figured that marinades make a big difference for me. I love playing around with ingredients and flavors to see what works best for me and for the recipe.
For grillng pork cutlets, or schnitzel, I’ve concocted a mustard marinade. To make it, you’ll need garlic, onion, mustard, balsamic vinegar, and olive oil. Salt and pepper are a must, of course. It’s best to marinate the pork for at least one hour, or even better, several hours or overnight, this will give the flavors plenty of time to soak in.
The result? A schnitzel that not only tastes good, but is also wonderfully tender. The marinade ensures juiciness and gives the meat a subtle sharpness that will transform into a delicious crust when grilled. Mmm, just thinking about it makes me want to fire up the grill right away.
Once ready, we suggest serving the mustard-marinated schnitzel with classic side dishes such as grilled vegetables or leafy salads. It also goes well with a potato salad or a fresh loaf of bread. Enjoy!

Mustard-Marinated Schnitzel
Ingredients
- 2 garlic cloves
- 1 onion
- 2 tbsp mustard
- 5 tbsp white balsamic vinegar
- ¼ cup oil
- salt and pepper
- 1½ lb pork schnitzel cutlets
Instructions
- Peel and finely dice the garlic and onion.
- In a bowl, combine the garlic, onion, mustard, balsamic vinegar, and oil. Season with salt and pepper.
- Place the schnitzel in a shallow dish and coat all sides with the marinade. Marinate the meat in the refrigerator for at least 1 hour.
- Grill the mustard-marinated schnitzel for about 3 minutes, or until cooked to your liking.
