Whether slightly smoky, Mediterranean, or spicy, zucchini wonderfully absorbs flavors while remaining nice and juicy. In addition, its bright green color alone is incredibly easy on the eyes.

And then, of course, there’s halloumi. Trust us, when we say its perfect for the grill. It will keep its firm texture even when on the grill, while still developing an absolutely fantastic golden-brown tan and mouthwatering aroma. Together, halloumi’s slightly salty taste and pleasant texture harmonize perfectly with the fruity notes of grilled zucchini. The whole recipe is then refined with a marinade made of olive oil, garlic, thyme, and paprika. Together, our skewers prove that grilling doesn’t have to be complicated to taste really good!

Grilled Zucchini and Halloumi Skewers

Ingredients
  

  • 1 zucchini
  • 1 package halloumi
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tbsp lemon zest
  • salt & pepper

Instructions
 

  • Cut the zucchini into approximately ¾-inch thick slices and the halloumi into similarly sized cubes so that both fit well onto the skewers.
  • Mince the garlic cloves and combine them in a bowl with olive oil, thyme, paprika, lemon zest, salt, and pepper. For some extra heat, add a pinch of chili flakes.
  • Add the zucchini and halloumi to the marinade and mix well. Let the mixture sit for 30 minutes so that the flavors can set.
  • Then, thread zucchini and halloumi in an alternate pattern onto the skewers. Make sure not to place the pieces too close together so that everything cooks evenly.
  • Preheat the grill and place the skewers over medium heat. Grill them for about 10-15 minutes, turning regularly, until the halloumi is golden brown and the zucchini lightly browned. Then remove the skewers from the grill and serve immediately. They taste great on their own or with a yogurt dip and some pita bread. Enjoy!
