Sausage Casserole with Tomatoes, Bread, and Chickpeas

  • 1 (9x13 in.) oval baking dish

Ingredients
  

  • 1 small baguette
  • 3 cups cherry tomatoes
  • 4 garlic cloves
  • 10 Italian sausages (salsiccia)
  • 2 cans (10 oz.) canned chickpeas

Instructions
 

  • Preheat oven to 400°F.
  • Toast the baguette until crispy and golden brown. Remove from the oven and set aside.
  • Wash and halve the cherry tomatoes.
  • Peel and mince the garlic.
  • Cut the baguette into bite-sized pieces.
  • In the baking dish, combine the tomatoes, garlic, and baguette pieces. Add a splash of water and toss to combine.
  • Cut the sausages into bite-sized pieces. Drain and rinse the chickpeas.
  • Add the chickpeas to the baking dish and mix well. Arrange the sausage pieces on top.
  • Bake for 30 minutes.
