Oatmeal Honey Muffins

Equipment

  • 12 Paper muffin liners
  • 1 12-cup muffin tin

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 cup rolled oats
  • 1 packet baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • 1 pinch of salt
  • 2 large eggs
  • cup honey
  • cup plain yogurt
  • ½ cup milk
  • cup canola oil

Instructions
 

  • Preheat oven to 350°F. Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk together the eggs, honey, yogurt, milk, and oil until well combined.
  • Add the wet ingredients to the dry ingredients. Stir gently until just combined.
  • Divide the batter evenly among the prepared muffin liners. Sprinkle with a few extra oats.
  • Bake for 25-30 minutes, or until golden brown. Your muffins are ready once a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before moving them to a wire rack to cool completely.
