Kefir Flatbread

Ingredients
  

  • 2 ⅓ cups all-purpose flour plus more for dusting
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup kefir room temperature
  • 1 tbsp olive oil plus more for cooking
  • 2 tbsp chopped fresh parsley

Instructions
 

  • Mix the flour, baking powder, and salt in a bowl.
  • Add the kefir and olive oil. Knead everything with your hands until a smooth dough forms.
  • Divide the dough into four equal portions and shape them into balls.
  • On a lightly floured surface, roll out each ball until they are about ⅛ inch thick.
  • Heat a skillet over medium heat and add some oil.
  • Cook each flatbread individually for 2–3 minutes per side, until golden brown spots appear and the dough puffs up.
  • After baking, sprinkle the flatbreads with chopped parsley or other herbs to taste.
