Grilled Pierogi Skewers

Ingredients
  

  • 6 pierogis
  • 1 small zucchini
  • 1 onion
  • 6-8 slices smoked bacon
  • ¼ cup olive oil
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp sweet paprika
  • salt & pepper to taste
  • 2 garlic cloves
  • cups cherry tomatoes

Instructions
 

  • Cut the pierogis into approximately ¾-inch thick slices or larger pieces.
  • Cut the zucchini into thick slices. Peel and chop the onions into bite-sized pieces. Cube the bacon, large cuts will do
  • In a bowl, combine the olive oil, honey, soy sauce, paprika, salt, and pepper for the marinade. Peel and press the garlic cloves through a garlic press and into the marinade. Mix everything well.
  • Alternately thread the pierogis, bacon, onions, cherry tomatoes, and zucchini slices onto skewers.
  • Brush the skewers generously with the marinade.
  • Let the skewers marinate for about 20 minutes.
  • Grill the skewers over direct heat for about 10 minutes. Turn them regularly until everything is nicely browned.
  • Serve the skewers directly from the grill while still hot.
