Caramelized Garlic Butter

Ingredients
  

  • 1 head of garlic
  • 1 cup butter
  • 2-3 sprigs fresh thyme
  • 1 organic lemon zest
  • 1 pinch of salt

Instructions
 

  • Separate the garlic cloves from the head and peel them.
  • Place the garlic and butter in a saucepan.
  • Melt the butter over low to medium heat. Then slowly brown the butter over low heat and caramelize the garlic.
  • Remove the browned butter and garlic from the heat and let it cool for 10-15 minutes.
  • Wash and dry the thyme. Remove the leaves from the sprigs. Wash the lemon with hot water and grate about a teaspoon of its zest.
  • Purée the butter and garlic until no garlic pieces are visible.
  • Pour the liquid garlic butter into a bowl. Beat it over an ice-cold water bath using a hand mixer until it has a creamy consistency.
  • Carefully stir in the lemon zest and fresh thyme. Season with salt to taste.
