Instructions
Separate the garlic cloves from the head and peel them.
Place the garlic and butter in a saucepan.
Melt the butter over low to medium heat. Then slowly brown the butter over low heat and caramelize the garlic.
Remove the browned butter and garlic from the heat and let it cool for 10-15 minutes.
Wash and dry the thyme. Remove the leaves from the sprigs. Wash the lemon with hot water and grate about a teaspoon of its zest.
Purée the butter and garlic until no garlic pieces are visible.
Pour the liquid garlic butter into a bowl. Beat it over an ice-cold water bath using a hand mixer until it has a creamy consistency.
Carefully stir in the lemon zest and fresh thyme. Season with salt to taste.
