Our Recipe for Caramelized Garlic Butter
I love garlic! In almost every dish, I need at least one clove. If you ask me, the principle “more is more” applies here. There simply can’t be enough garlic. Out of consideration for my fellow human beings, especially those in my immediate environment, I have already drastically reduced my garlic consumption. But there are times when I feel the need to celebrate to the clove! And thus came our caramelized garlic butter. While I am fully aware that not everyone shares this love, this recipe is an invitation to reconsider the sentiment.
After all, butter and garlic are a real dream team. The richness of the butter perfectly compliments the intensity of the garlic and brings everything to a whole new level. Trust us that this recipe really leans into this connection of these two. Calling for a whole head of garlic, this butter is not for the meek or fearful of intense breath! Of course, if you aren’t ready to take the plunge, you can of course adjust the butter and garlic.
Once you’ve decided where you stand, it’s time to get cooking. For the caramelized garlic butter, start by melting a whole stick of butter together with the peeled garlic cloves. Make sure to use a low heat, so that the butter doesn’t burn and that the garlic has time to properly caramelize. Once properly melted, let your garlic butter let it cool for a few minutes. Then puree it until smooth and, finally whisk it until creamy over an ice-cold water bath.
Simple in nature, big in taste. That’s just the beauty of our caramelized butter! That doesn’t mean you can’t add adornments. We decided to refine our caramelized garlic butter with some fresh thyme and lemon zest. Chili flakes or some coarse sea salt would also work well in it. Enjoy!

Caramelized Garlic Butter
Ingredients
- 1 head of garlic
- 1 cup butter
- 2-3 sprigs fresh thyme
- 1 organic lemon zest
- 1 pinch salt
Instructions
- Separate the garlic cloves from the head and peel them.
- Place the garlic and butter in a saucepan.
- Melt the butter over low to medium heat. Then slowly brown the butter over low heat and caramelize the garlic.
- Remove the browned butter and garlic from the heat and let it cool for 10-15 minutes.
- Wash and dry the thyme. Remove the leaves from the sprigs. Wash the lemon with hot water and grate about a teaspoon of its zest.
- Purée the butter and garlic until no garlic pieces are visible.
- Pour the liquid garlic butter into a bowl. Beat it over an ice-cold water bath using a hand mixer until it has a creamy consistency.
- Carefully stir in the lemon zest and fresh thyme. Season with salt to taste.
