Carbonara Potato Casserole

Ingredients
  

  • 2.2 lb potatoes
  • 1 cup Parmesan cheese
  • cups heavy cream
  • salt and pepper to taste
  • 1 large onion
  • oz bacon or soy-bacon
  • butter for greasing and frying
  • 1 egg beaten

Instructions
 

  • Preheat the oven at 350°F.
  • Peel the potatoes, slice them, and parboil for 10 minutes.
  • As the potatoes boil, grate the Parmesan. In a bowl, mix it with the heavy cream and the beaten egg. Season generously with salt and pepper.
  • Peel and chop the onion. Fry together with the bacon.
  • Grease a casserole dish and add the potatoes. Sprinkle the onions and bacon over top. Mix well.
  • Pour the cream sauce over the casserole. Bake for 25-30 minutes.
