Hearty Carbonara Potato Casserole: The Perfect Comfort Dish
Well, first we need to clarify: Our carbonara potato casserole isn’t a carbonara in the traditional sense. After all, the Italian classic isn’t creamy. But, we found through trial and error, that creaminess simply makes the casserole allthemore decadent.
Despite this casserole’s major flavor, it’s relatively easy to make. First, parboil the potatoes for a few minutes so that your carbonara potato casserole doesn’t need to spend so much time in the oven (and risk burning). This dish allows for some very intuitive multitasking. As the potatoes boil, you have time to quickly mix the sauce. Do so by simply grating the cheese, and then whisking it together with the cream and egg. Season generously with salt and pepper.
As the potatoes boil, you should also have time to chop the onion and fry the bacon in it. The good thing is: If you are vegetarian, you can still easily enjoy our carbonara potato casserole by simply subsituting soy-bacon. Now, you’ll mix the ingredients together in your casserole pan and let it bake for 25-30 minutes.

Carbonara Potato Casserole
Ingredients
- 2.2 lb potatoes
- 1 cup Parmesan cheese
- 1¾ cups heavy cream
- salt and pepper to taste
- 1 large onion
- 5½ oz bacon or soy-bacon
- butter for greasing and frying
- 1 egg beaten
Instructions
- Preheat the oven at 350°F.
- Peel the potatoes, slice them, and parboil for 10 minutes.
- As the potatoes boil, grate the Parmesan. In a bowl, mix it with the heavy cream and the beaten egg. Season generously with salt and pepper.
- Peel and chop the onion. Fry together with the bacon.
- Grease a casserole dish and add the potatoes. Sprinkle the onions and bacon over top. Mix well.
- Pour the cream sauce over the casserole. Bake for 25-30 minutes.
