Preheat oven to 350°F. Line a baking sheet with parchment paper.
Soak the dates in warm water for about 10 minutes. Drain the water and puree the dates or chop them into very fine pieces.
In a bowl, mix the oats, ground almonds, cinnamon, vanilla extract, baking powder, and salt together.
Add the eggs, melted coconut oil, and chopped or pureed dates. Mix until a smooth dough forms.
Form small balls from the dough. Line them up on the baking sheet, leaving some space between each ball. Flatten them slightly.
Bake the date-oatmeal cookies for about 12-15 minutes, until golden brown. Once golden, remove from the oven. Let them cool completely on a wire rack.
