Crunchy Breakfast Cookies

Ingredients
  

  • cups rolled oats
  • ¼ cup butter softened
  • ¼ cup margarine softened
  • ¾ cup spelt flour
  • 1 cup almonds ground
  • cup dates alternatively: agave nectar or rice syrup
  • ½ tsp vanilla extract
  • A pinch of salt
  • ½ tsp baking powder
  • 2 eggs
  • ¼ cup raisins
  • ½ cup applesauce

Instructions
 

  • Preheat the oven to 325°F. Combine all ingredients in a bowl and mix well.
  • Line a baking sheet with parchment paper. Form small mounds of dough and place them on the baking sheet. Gently flatten them.
  • Bake for about 15 minutes. Let the cookies cool slightly and then enjoy with jam or yogurt. Stored in an airtight container and the cookies will keep for about a week.
