Our low-carb coconut cake recipe consists of just six ingredients and is quick to bake. This makes it the ideal candidate when you’re craving a sweet dessert and want it without a big calorire or time commitment.

For the low-carb coconut cake, we completely avoid flour and replace refined sugar with xylitol. This has a similar sweetness to household sugar, but contains about 40 percent fewer calories. Eggs provide the necessary binding, while coconut flakes and milk intensify the flavor. A touch of vanilla extract and/or a pinch of cinnamon will round off the aroma perfectly.

In addition to its handful of ingredients, our low-carb coconut cake is just as simple when it comes to preparation. First, using a hand mixer, beat the eggs until frothy. Then stir in the milk, xylitol, baking powder, and vanilla extract. Finally, fold in the coconut flakes. Now all you need to do is pour the batter into a greased baking pan and bake in the oven for a good half hour. Do be careful to not overbake! The cake should not be so firm after coming out of the oven. But, as it cools, you’ll see that it will settle down. Ingredients
  

For the batter:

  • 4 eggs
  • ¾ cup milk
  • 1 tsp baking powder
  • ¼ cup xylitol
  • cups coconut flakes
  • 1 tsp vanilla extract

Additionally:

  • powdered sugar optional
  • coconut flakes optional

Instructions
 

  • Preheat the oven to 350°F and grease your baking pan.
  • In a bow, beat the eggs using a hand mixer until frothy. Stir in milk, xylitol, baking powder, and vanilla extract.
  • Fold in the coconut flakes.
  • Pour batter into prepared pan and bake for 35 minutes.
  • Remove from oven and let it cool completely before removing from pan.
  • Dust with powdered sugar or coconut flakes, if desired.
