Oatmeal Apple Cookies

Ingredients
  

  • 1 apple
  • cup butter softened
  • ¼ cup sugar
  • 1 egg
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ cup walnuts

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Peel, core, and dice the apple.
  • In a bowl, cream together the butter and sugar.
  • Beat in the egg.
  • Add the rolled oats, flour, baking powder, salt, cinnamon, and vanilla extract.
  • Chop the walnuts and fold them into the dough along with the diced apple.
  • Roll the dough into small balls and flatten them slightly. Place them on the prepared baking sheet, leaving some space between each cookie.
  • Bake for 12-15 minutes, or until golden brown.
