For the batter:

Instructions
Preheat the oven to 350°F and grease your baking pan.
In a bow, beat the eggs using a hand mixer until frothy. Stir in milk, xylitol, baking powder, and vanilla extract.
Fold in the coconut flakes.
Pour batter into prepared pan and bake for 35 minutes.
Remove from oven and let it cool completely before removing from pan.
Dust with powdered sugar or coconut flakes, if desired.
