Grilling season is in full swing. If you’re anywhere near backyards or gardens, it won’t be long before the smell of fresh grilled food greets your nose and your stomach gets rumbling. Our Recipe for Grilled Stuffed Bell Peppers
Bell peppers are dsimply made for stuffing. If you core them, you automatically have a perfect shape for all kinds of ingredients: quinoa, cheese, or ground meat. It seems just about everything tastes great in these beautiful bells! Plus, these peppers are perfect for cooking at high temperatures. When grilled, they develop a particularly soft and tender flesh and smoky aroma. All of these aspects make these grilled stuffed bell peppers a real treat!
We personally prefer to stuff our grilled stuffed bell peppers with spicy ground meat, onions, and feta. We then season the meat filling with paprika, cumin, and some chili. But, not really crazy about that spice blend? No problem, because it also tastes great with all sorts of other spices. If you prefer to only season with salt and pepper, that’s perfectly fine too and makes for a tasty end product.
It’s best to brown the meat before grilling for a few reasons. Not only does browning it advance give you a meat that lasts longer, but also gives you the chance to spice and flavor the filling in advance. Also the beef may not even brown in the pepper evenly, or quickly. So, do brown beforehand. Finally, wrap your stuffed bell peppers in aluminum foil and cook them along with your other best-loved grilled food.

Grilled Stuffed Bell Peppers
Ingredients
- 1 onion
- 1 garlic clove
- neutral oil for frying
- 1 lb ground beef
- 2 tbsp tomato paste
- ½ tsp paprika
- ½ tsp ground cumin
- ¼ tsp chili powder
- salt & pepper
- 4 bell peppers
- ¾ cup feta cheese
- some parsley
Instructions
- Peel and finely dice the onion and garlic.
- Sauté both in a bit of oil over medium heat until translucent. Then increase the heat and brown the ground beef.
- Mix in the tomato paste and spices. Season with salt and pepper.
- Halve and core the bell peppers. Divide the filling among the halves and wrap them in aluminum foil.
- Grill the foil packets for about 10-15 minutes, or until the bell peppers are soft. Unwrap them, crumble some feta cheese over the top. Garnish them with some chopped parsley, if desired.
