Even the kids will love it: Cheesy Cauliflower Snacks
Whether served as a side dish, a casserole, or even in pizza form, cauliflower is one versatile vegetable that's becoming more and more popular. Now it can even be served as a snack! That's right, chips and crackers have nothing on this humble veggie. So go on, show the cauliflower some more love.
You will need:
- 1 head of cauliflower
- 2 eggs
- 1/2 tsp oregano
- 2 garlic cloves, chopped
- salt and pepper
- 14 oz grated mozzarella
- 1 cup grated parmesan
- chopped parsley
- Grate the entire head of cauliflower.
- Add all the ingredients (using only 3.5 oz of the mozzarella) to the grated cauliflower and salt and pepper to taste. Mix thoroughly and press the mixture onto a lined baking tray. Bake at 340° F for 25 minutes.
- After baking, sprinkle the rest of the mozzarella on top, along with some pepper. Bake once more for 10 minutes at 340° F.
