Even the kids will love it: Cheesy Cauliflower Snacks

Whether served as a side dish, a casserole, or even in pizza form, cauliflower is one versatile vegetable that's becoming more and more popular. Now it can even be served as a snack! That's right, chips and crackers have nothing on this humble veggie. So go on, show the cauliflower some more love. 

You will need:

  • 1 head of cauliflower
  • 2 eggs
  • 1/2  tsp oregano
  • 2 garlic cloves, chopped
  • salt and pepper 
  • 14 oz grated mozzarella 
  • 1 cup grated parmesan
  • chopped parsley

Here's how:

  1. Grate the entire head of cauliflower.
  2. Add all the ingredients (using only 3.5 oz of the mozzarella) to the grated cauliflower and salt and pepper to taste. Mix thoroughly and press the mixture onto a lined baking tray. Bake at 340° F for 25 minutes. 
  3. After baking, sprinkle the rest of the mozzarella on top, along with some pepper. Bake once more for 10 minutes at 340° F. 

Nutritious, adaptable, and delicious. Take a back seat kale and avocados, there's a new healthy star in town. Enjoy!
