Our Quick Carrot Oats Recipe

Oats are a true superfood. They are an excellent source of fiber, especially beta-glucan, which both lowers cholesterol and promotes heart health. They also contain many vitamins and minerals such as: magnesium, iron, zinc, and vitamin B.

Carrots are also incredibly healthy. They are rich in beta-carotene, which the body processes into vitamin A and is important for eye health. Like oatmeal, carrots also provide a good amount of fiber, which not only supports digestion, but keeps you feeling fuller  longer. By pairing oatmeal with carrots, this dish will provide you with energy for hours.

Another plus: The carrots in this recipe give the porridge a pop  of orange, making our dish look as good as it tastes.

Another reason why our carrot porridge is so popular is because of its versatility. You can adjust it to your own preferences and pantry. Add some grated ginger to give it a spicier note, or refine it with a touch of vanilla or cinnamon. There are no limits to the toppings either: Nuts, raisins, shredded coconut, or a dollop of yogurt are perfect to switch things up, even if just a smidge.

Ingredients
  

  • 1 cup almond milk or other plant-based alternative
  • a pinch of salt
  • 1 carrot
  • ¼ cup quick-cooking rolled oats

Topping ideas:

  • almonds
  • carrot slices
  • raisins
  • shredded coconut

Instructions
 

  • In a pot, bring the almond milk, salt, and rolled oats to a boil, stir occasionally.
  • Peel and coarsely grate the carrot, then add to the still-boiling pot.
  • Cook until the oatmeal reaches your desired consistency. Serve with almonds, carrot slices, and/or other toppings of choice.
