Our Quick Carrot Oats Recipe

Carrots are also incredibly healthy. They are rich in beta-carotene, which the body processes into vitamin A and is important for eye health. Like oatmeal, carrots also provide a good amount of fiber, which not only supports digestion, but keeps you feeling fuller longer. By pairing oatmeal with carrots, this dish will provide you with energy for hours.

Carrot Oatmeal
Ingredients
- 1 cup almond milk or other plant-based alternative
- a pinch of salt
- 1 carrot
- ¼ cup quick-cooking rolled oats
Topping ideas:
- almonds
- carrot slices
- raisins
- shredded coconut
Instructions
- In a pot, bring the almond milk, salt, and rolled oats to a boil, stir occasionally.
- Peel and coarsely grate the carrot, then add to the still-boiling pot.
- Cook until the oatmeal reaches your desired consistency. Serve with almonds, carrot slices, and/or other toppings of choice.
