You’ve heard of zoodles, but may we introduce zoats? Zoats are a combination of zucchini and oatmeal. It’s a sure fire way to add a bit of green goodness to your breakfast routine, while enjoying the fullness of a bowl of oatmeal. Read below to find out just how to pull it off.
Zoats: An Oatmeal That Is Sure to Satisfy
You may be doubtful, but we assure you: Zucchini is really the perfect new ingredient for your oatmeal. After all, the summer veg doesn’t have a strong taste of its own, which makes it perfect for pairing with stronger flavors! That’s why this recipe calls for a bit of sweetness with bananas, and a bit of crunchiness with a nut garnish.
One of the reasons why I love oatmeal so much is because it’s so easy to customize. That’s why this recipe has so many moving parts, but trust that the sweetness, savoriness, and crunchiness of our zoats works in perfect harmony.
Plus: prepping our zoats is as simple as oatmeal can be. First, grate the zucchini and mash one banana. In a pot, mix the the grated zucchini, banana, and rolled oats well and bring them to a boil. Once boiling, lower the heat and let the mixture simmer for around five minutes. Meanwhile, chop up the other banana. Add it to your finished bowl, and season it with cinnamon and maple syrup. Once ready, nuts and some more fruit will make for a perfect garnish. Enjoy!

INGREDIENTS
- 1 cup zucchini, grated
- 2 bananas
- 1 cup rolled oats
- 2 ½ cups milk
- 2 tbsp maple syrup or agave nectar
- 2 tsp cinnamon
- 1 apple
- 1 handful of nuts
INSTRUCTIONS
- Clean and finely grate the zucchini. Mash one of the bananas.
- In a pot, bring the rolled oats, milk, grated zucchini, and mashed banana to a boil.
- Once boiling, reduce the heat and let the mixture simmer for 5 minutes. Stir occasionally and sweeten to taste with maple syrup and cinnamon.
- Meanwhile, slice the second banana and dice the apple.
- Split the zoats between four bowls. Top with nuts and fruit before serving.
