OATMEAL CHOCOLATE CAKE

Necessary tools

  • 1 rectangular 9.5 x 7 inch baking pan

INGREDIENTS

For the cake

  • 1 cup oat flour
  • 1 cup rolled oats
  • ⅔ cup xylitol
  • ¼ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 pinch salt
  • ⅔ cup oat milk
  • 2 large eggs
  • ⅓ cup pitted dates, chopped
  • ½ cup chopped sugar-free dark chocolate, chopped
  • 6 tablespoons unsalted butter

For the glaze

  • ½ cup chopped sugar-free dark chocolate
  • 1 teaspoon coconut oil

To garnish

  • 1 cup freeze-dried raspberries, crumbled

INSTRUCTIONS

  1. Preheat the oven to 350°F and line the baking pan with parchment paper. Alternatively, you can grease it with butter or margarine.
  2. In a bowl. combine the oat flour, rolled oats, xylitol, cocoa powder, baking powder and salt.
  3. Add the oat milk and eggs. Let the batter sit for 5-10 minutes.
  4. Chop the dates and chocolate into small pieces.
  5. Over the double boiler, melt the chocolate with the butter.
  6. Stir the dates into the batter and finally add the melted chocolate. Mix well.
  7. Pour the batter into the baking pan and smooth it out. Bake the chocolate oatmeal cake for 30-35 minutes. Do the toothpick test.
  8. Let the cake cool slighlty before removing it from the pan.
  9. Place it on a wire rack and let the cake cool completely.
  10. Over the double boiler, melt the chocolate together with coconut oil to make the glaze.
  11. Glaze the cake and garnish with crumbled, freeze-dried raspberries before serving.
