Healthy & Delicious: Blueberry Oatmeal Muffins

Is there anything better than starting the day off sweet? Today we’re getting not just sweet, but healthy too. Our blueberry oatmeal muffins are as healthy as they are delicious. They’re full of so many good ingredients, such as rolled oats, plain yogurt, banana, blueberries, and honey.

Both rolled oats and yogurt will provide you with fiber and protein, which ensure that you will be full for a long time. Blueberries and bananas bring vitamins, calcium, and magnesium. Plus, blueberries are also low in calories and can help lower cholesterol. So, what are you waiting for? Let’s get cooking!

First mix the yogurt with honey and eggs until smooth. Then fold in the flour, baking powder, salt, rolled oats, cinnamon, and vanilla. Now, mash the banana and add it to the mixture. Finally, fold in the blueberries.

Pour the batter into muffin liners, do use a muffin tin so that they can bake as evenly as possible. Bake for 20 minutes, and then you are ready to enjoy these beauts! Our recipe is designed for twelve muffins. So, this recipe is great for feeding many or feeding yourself for a few days over!

Blueberry Oatmeal Muffins

Ingredients
  

  • ¾ cup plain yogurt
  • 3 tablespoons honey
  • 2 eggs
  • 1 banana
  • 1⅓ cups all-purpose flour
  • 2 teaspoons baking powder
  • cups rolled oats
  • 1 teaspoon ground cinnamon
  • 1 vanilla bean
  • 1 pinch of salt
  • 1 cup fresh blueberries

Instructions
 

  • Preheat oven to 350°F.
  • In a bowl, combine the yogurt, honey, and eggs.
  • Peel the banana. Roughly mash it with a fork, then add to the yogurt mixture.
  • Mix in the flour, baking powder, rolled oats, cinnamon, vanilla bean seeds, and salt into the yogurt mixture. Finally, fold in the fresh blueberries.
  • Line a muffin tin with paper liners and divide the batter evenly among the liners. Bake the muffins for 20 minutes.

Notes

For even more flavor, you can add dark chocolate chips to the batter.
