First mix the yogurt with honey and eggs until smooth. Then fold in the flour, baking powder, salt, rolled oats, cinnamon, and vanilla. Now, mash the banana and add it to the mixture. Finally, fold in the blueberries.

Blueberry Oatmeal Muffins
Ingredients
- ¾ cup plain yogurt
- 3 tablespoons honey
- 2 eggs
- 1 banana
- 1⅓ cups all-purpose flour
- 2 teaspoons baking powder
- 1¾ cups rolled oats
- 1 teaspoon ground cinnamon
- 1 vanilla bean
- 1 pinch of salt
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F.
- In a bowl, combine the yogurt, honey, and eggs.
- Peel the banana. Roughly mash it with a fork, then add to the yogurt mixture.
- Mix in the flour, baking powder, rolled oats, cinnamon, vanilla bean seeds, and salt into the yogurt mixture. Finally, fold in the fresh blueberries.
- Line a muffin tin with paper liners and divide the batter evenly among the liners. Bake the muffins for 20 minutes.
