A Treat With Some Heat: Our Cowboy Caviar

It’s also known as Texas Caviar, and that already says a lot about the ingredients used. The beans and spicy jalapeño are some of the finest that Southwest cuisine has to offer. Cowboy caviar is somewhere between salad and salsa, which makes tortilla chips the perfect partner for this cowboy. But beware: It’s going to be hot! The fiery mix of chili, red and green onions has a kick. If you want to turn up the heat at your next party, this is your recipe.

Cowboy caviar is really similar to pico de gallo which is a staple of Mexican cuisine. But, this Texan version has significantly more ingredients, including: bell pepper and corn, for example. As is so often the case: Adapt the recipe to your preferences. If you don’t like it quite as spicy, use fewer chilies. Or add avocado or guacamole for more freshness. Favorite hot sauces will also brighten this dish. Enjoy!

Ingredients
  

For the salad:

  • 1 can (15 oz) kidney beans
  • 1 can (15 oz) white beans canned
  • 1 can (7 oz) corn canned
  • 1 cup cherry tomatoes
  • 1 bell pepper
  • 2 oz jalapeños jarred
  • 2-3 green onions
  • 1 red onion
  • fresh cilantro or parsley

For the dressing:

  • 1 lime
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 pinch of sugar
  • salt & pepper
  • garlic powder

For snacking:

  • tortilla chips

Instructions
 

  • Drain the beans and corn.
  • Meanwhile, wash the tomatoes and bell pepper and chop them. Mince the jalapeños, green onions, red onion, and cilantro. Combine all the salad ingredients together.
  • Wash the lime, zest and juice it. Whisk together both the zest and juice with the remaining ingredients for the dressing. Season with salt and pepper.
  • Toss the salad with the dressing, taste it one more time, and serve with tortilla chips.
