Baking Oat Bread: Our No-Flour No-Yeast Recipe
For our oat bread, you simply make your own flour by grinding rolled oats in a blender or stand mixer. Keep in mind, you also don’t need yeast for the dough. This has several advantages: You don’t have to schedule extra time for the dough to rest and rise, and you don’t have to worry about whether it will rise at all. Ah, how easy it all can be!
In addition to rolled oats, our oat bread also contains lots of nuts, seeds, and grains. That is to say, it is loaded with good fiber. Unlike its name might suggest, fiber is not at all heavy, but on the contrary, it’s really good for your stomach and keeps you full for a long time. Grind the nuts coarsely or finely to give the bread extra bite.

NO-YEAST OAT BREAD

Necessary tools
- 1 8-inch loaf pan
INGREDIENTS
- 2 cups rolled oats and a pinch more for sprinkling
- ½ cup walnuts
- ½ cup hazelnuts
- ¼ cup flax seeds
- ¼ cup chia seeds
- 2 tbsp white wine vinegar
- 2 tbsp agave nectar or maple syrup
- 2 tsp baking powder
- 1 tsp salt
- 2 cups + 2 tbsp water
- Butter or margarine for greasing
INSTRUCTIONS
- Preheat oven to 350°F. Using a stand mixer or blender, finely grind the rolled oats, nuts, and seeds.
- Pour the pureed mixture into a bowl. Add white wine vinegar, agave nectar, baking powder, salt, and water, Mix everything into a dough.
- Using butter or margarine, grease a loaf pan and pour the dough into it. Sprinkle with rolled oats and bake for 30 minutes. Don’t forget the toothpick test! If the dough hasn’t completely baked, keep the bread in the oven for up to 15 minutes longer.
- Once baked, remove the bread from the baking pan and let it cool on a wire rack.
NOTES:
- If you need to bake the bread longer, don’t forget to put some parchment paper on the loaf pan so that the top of the bread doesn’t burn.
