They’re true powerhouses: full of fiber, protein, and healthy fats, while being wonderfully moist and rich in flavor. A nice seed mix, like sesame, sunflower, and pumpkin, is sure to add an extra crunch.

Quick & Easy Baking: Our Recipe for Oatmeal Fingers

To begin, preheat your oven and line a baking sheet with parchment paper. Then let your rolled oats soak in a large bowl for a few minutes, typically around five. Afterwards,you can add all the remaining ingredients: cottage cheese, baking powder, and salt. Mix them well until a smooth dough forms.

Now, divide the oatmeal stick dough into twelve equal pieces and pour your seeds into a deep dish. Shape the dough pieces into fngers and roll in your seed mix until evenly coated. Place the fingers on the baking sheet and bake for 20 to 25 minutes, or until they’re slightly golden. Let them cool briefly before enjoying. For an extra treat, we recommend eating them with a bit of fresh butter spread on top.

INGREDIENTS

  • 1 ¼ lb quick-cooking rolled oats
  • 1 cup plus 2 tablespoons water
  • 2 lb cottage cheese
  • 1 to 2 tablespoons baking powder
  • 2 teaspoons salt
  • ¾ cup mixed seeds of your choice (such as chia, sunflower, pumpkin, or sesame)

INSTRUCTIONS

  1. Preheat oven to 350°F (convection). Line a baking sheet with parchment paper.
  2. Soak the rolled oats in water for about five minutes. Afterwards, add the cottage cheese, baking powder, and salt. Mix everything into a smooth dough.
  3. Divide the dough into 12 equal portions. With moistened hands, shape each one into a stick.
  4. Place your seeds in a dish, roll each stick in them until evenly coated on all sides. Place the coated fingers on your baking sheet.
  5. Bake for about 25 minutes, or until golden brown and crispy.
