Banana Oat Bread: A New Take On an Old Favorite

It would seem that in reaction to the Great Depression and advent of modern kitchen technology, the humble banana bread was a means of creatively circumventing kitchen waste. But, if necessity is the mother of innovation, it would seem that deliciousness is the mother of longevity, as we haven’t been able to get enough of this bread in the last century.

Banana bread is a fantastically simple and simply fantastic dish that can be counted on to not only remedy you of overripe bananas, but also satisfy a sweet tooth in a pinch. What’s more, is that the banana bread recipe is an incredibly versatile one that can be adjusted to any taste and kitchen inventory!

We know we’re not reinventing the wheel with our banana oat bread recipe, but rather, we’re adding a little bit of gravitas to a time-honored treat. Rolled oats will add a bit of bite to your favorite banana bread recipe, and provide a healthy, yet sweet snack when starting the day or on the go. So, why not treat yourself to a slice (or two)? As noted above, the best kind of bananas for a banana bread are overripe ones. Sweet and mushy, simply mash them with a fork until smooth. Afterwards, mix in eggs, oil, sugar and vanilla extract to begin your batter. In a separate bowl, combine flour, oats, baking powder, baking soda, cinnamon and salt. Now carefully fold the dry ingredients into the banana mixture until a smooth dough is formed. Afterwards, add toasted chopped walnuts and chocolate pieces for an extra bit of crunch and flavor. Pour the batter into a loaf pan and dust the batter with rolled oats for a final bit of texture. Make sure to gently press the oats into the batter, lest they fall off.

After 50 minutes, stick a toothpick into the center of the bread. Once it comes out clean, you’ll know your banana oat bread is ready to come out! Let it cool down and soon enough you’ll be able to enjoy the first piece(s).

BANANA OAT BREAD

Necessary tools

  • 1 loaf pan, 10 inches

INGREDIENTS

  • 3 oz chopped walnuts (about ¾ cup)
  • 3 ripe bananas
  • 2 large eggs
  • ½ cup packed light brown sugar
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup rolled oats + 1 tbsp extra for topping
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 3 oz bittersweet chocolate, chopped (about ½ cup)

INSTRUCTIONS

  • Preheat the oven to 350°F and line your pan with parchment paper.
  • Roughly chop the walnuts and toast without oil until they are lightly browned. Set aside.
  • Peel the bananas and mash in a large bowl until smooth. Add eggs, oil, sugar and vanilla extract. Mix well.
  • In a separate bowl, combine flour, oats, baking powder, baking soda, cinnamon and salt.
  • Gradually add the dry ingredients to the banana mixture and mix gently until a smooth dough is formed. Stir in chopped walnuts and chocolate.
  • Pour the batter into the pan, smooth the surface and sprinkle with the remaining oats. Gently press the oats into the batter so they don’t fall off.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool before removing it from the pan and slicing.
