Zucchini Salmon Skewers

Ingredients
  

  • 14 oz fresh salmon fillet
  • 2 zucchini
  • 7 oz cherry tomatoes
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp dried thyme
  • salt & pepper to taste

Instructions
 

  • Cut the salmon into bite-sized cubes.
  • Halve the zucchini lengthwise and cut into thick slices. Leave the cherry tomatoes whole.
  • Peel and finely chop the garlic, or, run it through a garlic press.
  • For the marinade, combine olive oil, lemon juice, honey, garlic, thyme, salt, and pepper in a bowl.
  • Place the salmon, zucchini, and cherry tomatoes in the marinade. Let sit for about 30 minutes.
  • Thread the ingredients alternately onto wooden or metal skewers.
  • Grill the skewers for about 8-10 minutes, until the fish is cooked through and the vegetables tender. Turn regularly while grilling.
  • Serve the skewers directly hot off the grill.
