Cut the salmon into bite-sized cubes.
Halve the zucchini lengthwise and cut into thick slices. Leave the cherry tomatoes whole.
Peel and finely chop the garlic, or, run it through a garlic press.
For the marinade, combine olive oil, lemon juice, honey, garlic, thyme, salt, and pepper in a bowl.
Place the salmon, zucchini, and cherry tomatoes in the marinade. Let sit for about 30 minutes.
Thread the ingredients alternately onto wooden or metal skewers.
Grill the skewers for about 8-10 minutes, until the fish is cooked through and the vegetables tender. Turn regularly while grilling.
Serve the skewers directly hot off the grill.
