Strawberry Chocolate Loaf Cake

Ingredients
  

For the batter:

  • 1 cup softened butter
  • ¾ cup sugar
  • 1 tsp vanilla sugar
  • 4 large eggs
  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ cup dark chocolate melted
  • 1 cup fresh strawberries

For the topping:

  • ½ cup dark chocolate glaze melted
  • 4 fresh strawberries halved or sliced
  • a few mint leaves

Instructions
 

  • Preheat oven to 350°F. Lightly grease a 9x5 inch loaf pan or line it with parchment paper.
  • Cream together butter, sugar, and vanilla sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together flour and baking powder. Add to wet ingredients and mix until just combined. Stir in the melted dark chocolate.
  • Dice the strawberries and gently fold them into the batter.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool in the pan.
  • Drizzle the chocolate glaze over the cooled cake. Arrange sliced strawberries and mint leaves on top.
