Wash and clean the red cabbage, remove the core, and slice into thin strips. Peel and thinly slice the green onions. Place the red cabbage, green onions, and shredded chicken into a large bowl.
Zest and juice the lime. Chop the peanuts. For the dressing, whisk together the lime zest, lime juice, soy sauce, sweet chili sauce, and the remaining olive oil. Pour the dressing over the salad and mix well.
Garnish the salad with the chopped peanuts and fresh cilantro. Enjoy!
