Peach, Blueberry, and Feta Salad

Ingredients
  

For the salad:

  • 2 peaches
  • ¾ cup blueberries
  • ½ cup feta
  • 3 cups arugula
  • ¼ cup almonds

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

  • Wash the peaches and blueberries. Slice the peaches thinly and arrange them on the salad along with the blueberries.
  • Crumble the feta over the salad and top with almonds.
  • Prepare the dressing: In a small bowl, mix together the olive oil, vinegar, honey, salt, and pepper. Season to taste.
  • Pour the dressing over the salad and gently toss.
