Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Cut the chicken into bite-sized pieces. Grate the ginger.
Whisk together soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, cornstarch, and water to make a marinade.
Add the chicken pieces to the marinade and let them sit for at least 10 minutes.
Spread the chicken pieces on the baking sheet and bake for about 20–25 minutes. Turn the chicken pieces once halfway through.
After baking, sprinkle the chicken pieces with sesame seeds and the chopped green parts of the scallions and serve with rice and vegetables of your choice.
