Oven-Baked Teriyaki Chicken

Ingredients
  

  • 11 oz chicken breast fillets
  • 1 tsp ginger
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 garlic clove
  • 1 tsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tbsp sesame seeds
  • 2 scallions

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Cut the chicken into bite-sized pieces. Grate the ginger.
  • Whisk together soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, cornstarch, and water to make a marinade.
  • Add the chicken pieces to the marinade and let them sit for at least 10 minutes.
  • Spread the chicken pieces on the baking sheet and bake for about 20–25 minutes. Turn the chicken pieces once halfway through.
  • After baking, sprinkle the chicken pieces with sesame seeds and the chopped green parts of the scallions and serve with rice and vegetables of your choice.
