Oatmeal Burgers with Onion Jam

Ingredients
  

For the onion jam:

  • 1 lb onions
  • 2 tbsp oil
  • 2 tsp brown sugar
  • ¾ cup apple juice
  • 1 pinch of cinnamon
  • salt & pepper to taste
  • oregano
  • 1 tsp balsamic vinegar

For the patty:

  • ½ cup onions
  • 3 tbsp oil
  • cups rolled oats quick-cooking or old-fashioned
  • ¾ tsp mustard
  • ½ tsp tomato paste
  • 1 tbsp beetroot juice
  • 1 cup clear vegetable broth

Additionally:

  • 3 oz arugula
  • 4 burger buns or whole wheat rolls for baking
  • chipotle
  • ½ jar sandwich pickles

Instructions
 

  • Start by making the onion jam. Peel the onions, halve them, and slice them into rings.
  • Heat oil in a pot and sauté the onions. Then, add the sugar and let it caramelize. Deglaze the onions with the apple juice and add the cinnamon. Let the jam simmer and then season with salt, pepper, oregano, and balsamic vinegar. Remove from heat and set aside.
  • For the patties, peel the onions and dice them finely.
  • Sauté them in a pan until translucent and toast the oats along with them. Add mustard, tomato paste, and beetroot juice.
  • Remove the pan from the heat and pour in the vegetable broth until a compact and kneadable mass forms.
  • Now, make 4 patties and fry them in 2 tablespoons of oil in a large pan.
  • Wash the arugula and dry it with a paper towel.
  • Spread chipotle sauce on the bun halves and place some arugula, a few sandwich pickles, and one patty on the bottom half.
  • Spread the onion jam on top as desired and place the top bun on top.
  • Secure the burger with a wooden skewer if needed before serving. Enjoy!
