Cut the chicken into 6 equal pieces, then transfer to a bowl.
Peel and press the garlic, then add the soy sauce, maple syrup, olive oil, and the juice of one lemon. To season, add chili flakes, and a generous pinch of salt and pepper. Let the chicken marinate for 20 minutes.
Preheat the oven to 350°F (convection). Slice the second lemon.
Once the chicken has marinated, arrange the pieces on a baking sheet or in a baking dish. Top the cupts with lemon slices and a few sprigs of thyme on top.
Bake the chicken for 40-45 minutes, or until cooked through, make sure to turn the chicken a few times while cooking.
