Kohlrabi Salad with Crispy Bacon

Ingredients
  

  • 5-6 slices of bacon
  • 2 kohlrabi
  • 1 apple
  • 1 small red onion
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 1 tsp honey
  • 1 tsp mustard
  • salt & pepper to taste
  • some fresh parsley

Instructions
 

  • In a pan, fry the bacon over medium heat until crispy. Then let it drain and cool on paper towels.
  • Peel the kohlrabi and the apple. Using a grater, grate both into thin strips or dice everything into small cubes. Peel the onion and cut into thin rings. Place everything into a large bowl.
  • Wash and dry the parsley, then finely chop it.
  • In a small bowl or dressing shaker, combine the apple cider vinegar, olive oil, honey, mustard, and parsley to make a dressing. Season the mixture with salt and pepper to taste.
  • Pour the dressing over the kohlrabi salad and mix well. Crumble and then sprinkle the bacon over the salad. Enjoy!
