In a pan, fry the bacon over medium heat until crispy. Then let it drain and cool on paper towels.
Peel the kohlrabi and the apple. Using a grater, grate both into thin strips or dice everything into small cubes. Peel the onion and cut into thin rings. Place everything into a large bowl.
Wash and dry the parsley, then finely chop it.
In a small bowl or dressing shaker, combine the apple cider vinegar, olive oil, honey, mustard, and parsley to make a dressing. Season the mixture with salt and pepper to taste.
Pour the dressing over the kohlrabi salad and mix well. Crumble and then sprinkle the bacon over the salad. Enjoy!
