Grilled Peach Salad with Burrata

Ingredients
  

For the salad:

  • ½ head butter lettuce (about 4 cups) Boston or bibb
  • 2 peaches
  • olive oil
  • ¼ cup walnuts
  • 1 tsp honey
  • 2 burrata

For the dressing:

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • salt & pepper to taste

Instructions
 

  • Wash the lettuce and pat it dry. Wash the peaches, halve them, and remove the pit.
  • Add some olive oil to a grill pan. Grill the peach halves for two minutes on each side. Then add the walnuts with some honey to the pan and caramelize them over low heat. Tear the burrata into small pieces with your hands.
  • Pour olive oil, lemon juice, salt, and pepper into a sealable jar and shake until the ingredients are well combined.
  • Then spread the lettuce on two plates. Add two peach halves each and sprinkle with the walnuts and burrata pieces. Finally, pour the dressing over the salad.
  • Toss and serve. Enjoy!

Notes

Alternatively, you can also roast the peaches on the grill.
