bell peppers
any color or mix of colors will do

garlic clove

cup
balsamic vinegar
¼
cup
olive oil
salt and pepper

handful
basil
⅔
cup
Parmesan
grated or shaved
Instructions
Wash the bell peppers and core the bell peppers. Cut them into strips or pieces.
Meanwhile, peel and mince or grate the garlic. Combine it with the balsamic vinegar, olive oil, salt, and pepper.
Rinse and dry the basil, then give it a rough chop. Grate or shave the Parmesan.
In a bowl, mix the bell peppers with the dressing. Sprinkle the basil and Parmesan on top before serving.
Notes
Instead of a grill pan, you can also cook the bell peppers on a grill, in the oven, or in a regular pan.
Toasted pine nuts, sprinkled over the salad at the end, make a great addition.
If you want to serve the salad as a main course, add some fresh baguette.
