Grilled Watermelon with Lime and Cilantro

Smoky flavor, the smell of charcoal burning and the promising sizzle of meat dripping into the embers: All of these things turn a nice evening into a perfect one. Have a sudden desire to roll your grill out from wherever it's hiding? Before you do, be sure to make a trip to the fruit section of the supermarket. Although you won't believe it, there's a fruit that's perfect for the grill. It's time to rearrange your steaks, hot dogs, and ears of corn and make room for watermelon!

Ingredients
  

  • 1/4 watermelon
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tbsp cilantro chopped

Instructions
 

  • Take 1/4 of a watermelon, and cut off the ends. Cut the remaining melon into six thick slices and lay them flat.
  • Put a bit of lime juice into a small bowl and using a brush, apply the juice to one side of your watermelon slices. Next, add a coat of olive oil. Flip the slices over and follow the same procedure.
  • Sprinkle a bit of salt (to taste) and place the watermelon on the grill, cooking for three minutes on both sides.
  • Before serving, add another splash of lime juice and garnish with cilantro.
