Mini Apple Pies

Ingredients
  

  • 2 apples
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp butter
  • 1 tbsp cornstarch
  • 2 sheets shortcrust pastry
  • 1 egg white

Instructions
 

  • Peel the apples and cut them into small cubes, then place the cubes in a bowl.
  • Add the brown sugar and cinnamon to the apples and mix well.
  • Melt the butter in a pan and add the apples first, followed by the cornstarch. Cook until the apple mixture begins to thicken.
  • Place small portions of the cooked apples on the outspread pastry sheet, and cover with a second sheet. Press the second sheet firmly down, and cut out the apple-filled pastry with a round cookie cutter. Using a fork, press the edges of your mini pies. Brush the pies with egg white and cut a small cross on the top of the pies to avoid cracks.
  • Now bake in the oven at 375°F for 15-20 minutes.
