Peel the apples and cut them into small cubes, then place the cubes in a bowl.
Add the brown sugar and cinnamon to the apples and mix well.
Melt the butter in a pan and add the apples first, followed by the cornstarch. Cook until the apple mixture begins to thicken.
Place small portions of the cooked apples on the outspread pastry sheet, and cover with a second sheet. Press the second sheet firmly down, and cut out the apple-filled pastry with a round cookie cutter. Using a fork, press the edges of your mini pies. Brush the pies with egg white and cut a small cross on the top of the pies to avoid cracks.
