This recipe for a tasty no-bake cake is a super simple, hassle-free way to get your strawberries & cream fix, all without having to slave away in the kitchen for hours. We've even sweetened the deal by adding chocolate graham crackers and apricot cream into the mix. This easy cake is a no-brainer!
1⅓ cupscream cheesefor the apricot cream cheese frosting
⅓ cupsugarfor the apricot cream cheese frosting
½ cupapricot jamfor the apricot cream cheese frosting
48chocolate graham crackers
16strawberries
fresh mintto garnish
Instructions
For the cream cheese frosting, whip the cream cheese and sugar together, fold in the heavy cream, and spoon the mixture into a piping bag. For the apricot cream cheese frosting, whip the cream cheese and sugar together, fold in the apricot jam, and spoon the mixture into a piping bag.
Arrange 3 chocolate graham crackers in a row on top of a piece of parchment paper, spread some of the cream cheese frosting over the chocolate graham crackers, place a strawberry in the middle, and use the parchment paper to fold the outer chocolate graham crackers up to create a triangle. Use the same method to create a chocolate graham cracker triangle with the apricot cream cheese frosting. Repeat the process until you have 8 chocolate graham cracker triangles with cream cheese frosting and 8 chocolate graham cracker triangles with apricot cream cheese frosting.
Assemble the chocolate graham cracker triangles in a fun shape and refrigerate overnight. Garnish the chocolate strawberries & cream cake with the remaining frosting and fresh mint before serving.
