Let the pork loin, paprika, tomato sauce, vinegar, salt, and pepper marinate in a casserole dish. Place the pork loin in a skillet over medium heat and briefly sear the meat on all sides. Repeat the process with the sweet potatoes for the mashed sweet potato waffles, also making 6 rectangles.
Assemble the mashed potato waffle stack in the following order: 2 mashed potato waffle rectangles, pulled pork, shredded mozzarella, 2 mashed sweet potato waffle rectangles, guacamole, sour cream. When you reach the last layer of mashed sweet potato waffles, top with a final layer of shredded mozzarella.
