Pork Belly Tacos with Cherry Cola Marinade

Ingredients
  

  • 2 lbs pork belly
  • 24 oz cherry cola
  • 3/4 cup BBQ sauce
  • 1.5 cups sugar
  • 3 tbsp oregano
  • 3 tbsp paprika
  • 3 tbsp salt
  • 3 tbsp pepper
  • 3 tortillas
  • shredded lettuce
  • pineapple salsa
  • shredded cheddar cheese
  • 1 pineapple, diced
  • 1 red onion, diced
  • 3/4 cup chopped parsley
  • 1-2 chili peppers, diced
  • 3 limes, juiced
  • salt & pepper to taste

Instructions
 

  • Combine the ingredients for the cherry cola marinade in a large casserole dish. Cut the pork belly into several equally-sized pieces, place them in the casserole dish, and let marinate for 5 hours.
  • Cover the casserole dish with aluminum foil, place on the bottom rack of a preheated oven, and cook at 350°F for 1 hour. After 50 minutes, hang the 3 tortillas over the top oven rack and cook for 10 minutes.
  • Remove the cooked pork belly pieces from the casserole dish, sear them on all sides in a pan over medium heat, and brush the cherry cola marinade over them.
  • Cut the cooked pork belly into bite-sized pieces and prepare the pineapple salsa. Assemble the pork belly tacos with shredded lettuce, cherry cola pork belly pieces, pineapple salsa, and shredded cheddar cheese. Garnish with some of the cherry cola marinade before serving.
